And it’s because of this that this healthy and easy banana bread recipe is almost always cooling on my window sill.

This banana bread recipe is something I’ve been working on for years. When I finally got this healthy mixture together, something that I could serve regularly and not be concerned about having my body become as doughy as the bread, I was in heaven.

Banana bread is a delicious treat, but it’s often made with processed all-purpose flour, processed sugars, and loads of butter. This healthy banana bread recipe uses whole wheat flour and is sweetened with unprocessed sweeteners like honey or maple syrup.

To top it all off, this recipe uses unrefined oil such as virgin coconut oil or vegetable oil rather than massive amounts of butter. The oils are far easier for your body to process yet help bring out the rich banana flavor.

We’ve talked about heavy breakfasts like the dreamy banana fosters pancakes; unlike those recipes, this banana bread won’t send your blood sugar into space.

How To Make Easy and Healthy Banana Bread

This easy banana bread recipe has some room to play. With a few small adjustments, you can completely change the flavor. I’ll list some of the changes within the recipe itself.

Yield: 1 loaf

Ingredients

  • 1/3 cup coconut oil (melted). This can be subsituted with high quality vegetable oil.
  • 1/2 cup maple syrup. Can be subsituted for honey.
  • 2 large eggs
  • 1 cup mashed ripe bananas (approx. 2-3 bananas).
  • 1/4 cup milk
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon. Plus 1 tsp to sprinkle on the final product.
  • 1 3/4 cups whole wheat flour.

Instructions

  1. Preheat oven to 325°F .
  2. Grease a 9×5-inch loaf pan.
  3. Add oil and maple syrup to a large bowl. Whisk together until combined.
  4. Add eggs to the bowl and beat the mixture well.
  5. Add mashed bananas and milk. Continue to beat until combined.
  6. Add the baking soda, vanilla, salt, and cinnamon to the bowl. Whisk to combine.
  7. Using a large spoon, stir in the flour until combined.
  8. Pour the batter mixture into the greased loaf pan. Sprinkle the top lightly with the extra tsp of cinnamon.
  9. Bake the loaf on the middle rack until a toothpick can be inserted and retracted cleanly (approx 55-60 minutes)
  10. Once cooked through, let the banana bread cool for at least 10-minutes.
  11. Transfer loaf to a wire rack to finish cooling.
  12. Serve while slightly warm.

Notes

If the coconut oil solidifies on contact with the colder ingredients, let the bowl rest in a warm place for a few minutes and it should liquify. If the oil remains solid, microwave the mixture for approx. 10-seconds.

If you find that the loaf sticks to the pan, you may need to run a knife around the edges to loosen it.
