This recipe combines super ripe bananas with a classic French toast custard to add a new layer of flavor that is perfect for those extra special mornings that just beg or something on the rich side.

Ingredients

  • 4 large eggs with yolks separated
  • 1 cup of whole milk
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 8 slices banana bread (the fresher the better)
  • 4 tbsp unsalted butter for cooking

Instructions

  1. In a medium bowl, whisk together egg yolks and milk.
  2. Add in vanilla, cinnamon, and salt, Continue mixing until the custard is consistent.
  3. Pour mixture into a shallow baking dish.
  4. Slice banana bread (approx 3/4") and lay slices in the custard.
  5. Allow bread to soak for 15 minutes then flip slices and soak for an additional 15 minutes.
  6. Heat a large skillet over medium-low heat.
  7. Once the skillet is hot, add enough butter to cover the cooking area when melted.
  8. Without crowding the pan, add slices of banana bread. Cook for 2-3 minutes per side until the bread is golden brown with lightly crispy edges and cooked through.
  9. Serve warm with maple syrup, sliced bananas, and/or fresh berries.

Notes

Banana bread french toast will only remain tasty for about two days after cooking, so if you have leftovers, try to use them right away.
