Throughout my travels in Thailand, I was blown away by the food. And ever since I started sharing some of the best food in Thailand on Flavor the Globe, the response has been AMAZING. It seems that a lot of people have traveled to the country and fallen head-over-heels for Thai cuisine as much as I have.
I’ve been quick to share some of the easier recipes such as the Thai green curry chicken recipe. But this Beef Massaman curry recipe had to wait. I was going back and forth with Vannee, my cooking mentor from Chiang Mai who helped me wrap my head around the secrets to good Thai cooking.
There were a few ingredients in my inital tries that just didn’t quite taste right, and after some back and forth, we finally figured out why.
Massaman curry uses Massaman curry paste as its base. And while I was using the right ingredients, I wasn’t quite using them in the right way. So the flavor was delicious, but not quite perfect. It seems that the key was in roasting the spices. And that made all of the difference.
Beef Massaman curry is absolutely delightful. Unlike many curries, this dish is typically on the mild side and offers a sweet, tangy finish that makes it very popular for both adults and children alike. While Massman curry can be used to make vegetarian, chicken, and lamb versions, this beef Massman curry was among the most popular of all in Thailand.

How to Make Authentic Beef Massaman Curry
This coconut-based recipe is one of my favorite dishes while traveling in Thailand with kids. Everyone in my family loved it, even my little guy, who tends to be on the picky side.
Just follow the recipe below and you’ll have a dish that you’ll want to make over and over again.
Beef Massaman Curry Recipe
This beef Massaman curry recipe combines delightfully sweet and tangy curry paste with melt-in-your-mouth beef to create one of the easiest and most unforgettable Thai dishes.
Ingredients
- 14 oz stewing beef
- 8 bay leaves
- 6 roasted cardamom fruits
- 4 tbsp roasted peanuts
- 3 tsp roasted cinnamon
- 2 medium onions. Cut into 1/4 inch pieces
- 1 tbsp tamarind paste
- 1/2 cup fish sauce
- 1 cup coconut cream
- 3 cups coconut milk
- 4 tbsp cooking oil
Instructions
- Make your Massman curry paste from this recipe.
- Ground up the spices with a mortar and pestle or food processor until fine.
- Cut stewing beef into 1 inch cubes.
- In a wok or large sauce pan, heat the cooking oil over medium-low.
- Once hot, add curry paste and stir until fragrant (approx. 1 minute).
- Add coconut cream and gently stir until simmering.
- Raise heat to medium. Add beef, fish sauce, and palm sugar. Stir regularly until beef is cooked through.
- Add coconut milk. Stir thoroughly.
- Add potatoes, onion, tamarind paste, and spices. Bring to a boil for 5-minutes.
- Remove from heat and transfer to a bowl.
